Jeramie Posted December 7, 2006 Report Share Posted December 7, 2006 Ok Two things, as ive stated before, I love to duck hunt but hate to eat them. A guy I use to duck hunt with told me the only thing worth keeping is the breast. He also told me its about the only meat on them. Every duck ive cleaned was breasted. Is this what everyone else does? Also (Part II) ive tried wrapping them in bacon and throwing them on the grill. Ive soaked them in Thousand island dressing and then floured and fried, etc. I havent found a way yet that I like them. Lets hear your recipees. Im heading out next weekend on a big duck hunt and id like to hear some ways to try duck in hopes that I find a good one. DU_man_84 Posted December 7, 2006 Report Share Posted December 7, 2006 Re: Do you just breast them and what recipee? alright here are some of my recipes, i always just breast out my birds 1. i will take the breast and just slap them on the grill fresh out of the bird and add all my own seasonings, garlic salt, salt, pepper, anything you want, thats the boring way, still good i think 2. i will poke holes in the breast with a fork, marinate them in thousand island dressing for bout 48 hours, (i like to give them a good soak in the dressing) pull em out slap em on the grill add my normal seasons, but then lastly i add McCormicks Montreal Steak season, it has a kick to it and really spices it up and cook em medium rare 3. ill take a breast it out, flatten it out with a meat mallet, bread it up with your favorite breading, deep fry it for 3 to 5 minutes put it on a bun, add some hot sauce makes a great sammich As for goose, its a little harder, but you can make it work 1. ive done the cut em up into inch cubes and wrap in bacon, ehh its ok not as great as some people say 2.(my favorite), take bout 4 goose breast throw em in the crock pot, pour beer over them until it covers the goose, let it cook on low for 8 hours or so, or until you can pull the meat out and starts to fall apart, take it out shred it up, put it back in and add your favorite bbq sauce (sweet baby rays for me) let it cook for another 2-4 hours on low and take out and make bbq sammiches, youd never know the the difference from it being goose to it being beef 3. i take 20lbs or goose up to a local guy here he ads 20lbs pork and jalepeno cheese and he makes me some goose sticks and man are they awesome, more of an expensive way though, them are some of my recipes try em out Quote Link to comment Share on other sites More sharing options...

The guy I use to hunt with took all the meat but he moved off. I havent hunted them since. I NEVER hunt anything unless im willing to eat it. I was raise to believe that. Then we cut them into 1" cubes and let them soak in some sort of brisket or meat marinade. Wrap each one in bacon and put a toothpick through them to hold them together.(make sure and soak the toothpicks in water to prevent burning) Then we put all the little wraps in a folding wire basket and cook them on the grill. Just be sure not to overcook them. This has got to be one of my favorites. If it is the gamey taste you don't like try some "Allergo - Game Tame" It helps take the game tast out. Put some olive oil in a frying pan, cut up some onion and fresh mushrooms and fry it until the onions are clear. Now add some garlic to taste. (The more you use the better it will taste) Throw in some Tony Chachere's and Parsley. Take your duck breast and Somewhat butterfly them to make a pocket. Stuff them as full as you can with the onions and mushrooms. Wrap them in bacon cover again with Tony Chachere's and cook indirect on the grill with mesquite and Kingsford. Don't over cook it!! The best way I found to cook geese is put the breast of 4 geese in a slow cooker with apple juice and some brown sugar. For about 7-9hrs than drain the juice. The meat should fall apart add your favorite bbq sauce. Makes a great bbq sandwich. I got a brother that loves it and he hates to eat waterfowl. He thinks its deer or beef.
