The biggest mistake most folks make mounting tail feathers is NOT removing all the meat from the base of the tail.

Many guys cast a "tail hub" on the tail feathers out of Bondo or Epoxy. Drill holes in the hub and mount to that.

You can squeeze the tail in place with a backing board but I've found sealing the hub area with bondo or epoxy helps it last longer.

What I do is remove all the meat I can from the tail feathers.Then I'll spread the feathers out on a piece of cardboard and use pins to position the feathers where they need to be. Then I cover all the meat I couldnt get off with salt. Then I'll usually put a heavy book or something similar ontop of it to flatten the fan out so it hangs flush on the wall. I will put fresh salt on it everyday and it usually takes a week and a half for it to completely dry out.

For the beard, I do the same thing. Just remove as much meat as possible and salt it down. I like to take a piece of heavy fishing line and tie it around the base so I dont loose any beard strands as well. Then make yourself a plaque and secure the feathers and beard to it. When I get time, I'll take some pictures of some of my mounts I've done.
