LifeNRA Posted January 17, 2007 Report Share Posted January 17, 2007 Well, made a small batch of Pepper Garlic Venison jerky tonight. The smell is driving me NUTS!!!!!! But, I have noticed that the meat seems to be drying a lot faster than beef! I like a harder piece of jerky so normally I keep beef on for about 7-8 hours. The venison has been on my dehydrator now for about 5 hours and seems to be done! How long do you all dry deer meat supposed to beef? Or do you do both the same? I monitor its progress and when it reaches the stage I want, I pull it from the smoker, oven, etc. I was looking on the 'net' today about jerky making and I saw the box fan method Alton Brown did on his show. Once the meat is sure, lay it out on cotton furnace filters and bungee them to a box fan and tuen it on. In 12 hours -+ you have dried jerky. It looks interesting. We used the Hi Mountain Pepper Blend. Mmmm-Mmmm, good stuff!! Like you said, it's hard to go wrong with the Hi Mountain blends. I just bought a package of the maple blend for birds/poultry. The favorite here is the hi mountain hickory or mesquite flavor. As far as knowing when it is done, like AJ says it is done when it is done, times will vary some with what you are using(type of dehydrator or smoker, ground or whole muscle meat, and how thin or thick the strips are)and with how heavy you load. Have done small batches, 3 lbs or so that took about 6 or 7 hours, and then have done 5 lb batches that have taken as long as 8 or 9 hours. What would take 7-8 hours for beef, it was only 5 hours for the deer meat I used. As a test batch, it only took a few hours and the jerky is now GONE! LOL! We make a whole bunch of jerky and the son and his family come over and it vaporizes!! The 2 smallest granddaughters were here this evening for a bit and when he came to get them, there went the rest of the package! LOL!! I guess we will have to make another 10 pounds next week!! The first half hour I smoke it..the rest of the time involves the actual slow drying. A thermometor is a MUST!! High Mountian used here too..its the best!
