Depending on what you want to do with it, I like to mix up a little something for all kinds of chicken and ribs. I use catsup, mustard, balsalmic vinager, brown sugar,and adobo sauce. I put all of this in a 1 gallon ziplock bag and marinade with it, and also put some aside to baste with as well. I like these: BOURBON BBQ SAUCE 2 (14-ounce) bottles tomato ketchup 3/4 cup bourbon 1 tablespoon molasses 1 tablespoon Creole or whole grain mustard 1 tablespoon chopped garlic 1/2 cup chopped onions 1/4 cup firmly packed light brown sugar 1 teaspoon hot pepper sauce 1 teaspoon Worcestershire sauce 1/2 teaspoon salt 1/4 teaspoon cayenne 1 tablespoon peeled and grated fresh ginger Combine all of the ingredients in a food processor or blender and process until smooth, about 15 seconds. Scrape down the sides of the bowl with a rubber spatula. Pulse 2 or 3 times. Store in a sterilized container until ready to serve. -------------------------------------------- SWEET BBQ SAUCE One 14-ounce bottle of ketchup 1/2 cup water 2 teaspoons molasses 2 teaspoons Creole or whole grain mustard 2 teaspoons chopped garlic 1/4 cup chopped onions 2 tablespoons firmly packed light brown sugar Hot pepper sauce (to taste) Dash of Worcestershire sauce Pinch of salt 1/8 tsp cayenne pepper 2 teaspoons ginger Pinch of freshly ground black pepper In a food processor combine all of the ingredients. Process until smooth, about 15 seconds. Scrape sides with a rubber spatula and pulse several times. Refrigerate before using to allow flavors to mix, overnight if possible. ------------------------------------------------ Basic BBQ Sauce 32 oz Ketchup 16 oz Worcestershire Sauce 12-14 oz V-8 Juice 1/2 lb Butter 1/2 lb finely chopped onion 1/2 lemon finely diced (peel, meat and seeds) 4 garlic cloves, finely minced 4 oz tomato puree Melt butter in large saucepan and sauté onions until tender. Add remaining ingredients and simmer to consistency. -------------------------------------------------------- Murphy’s BBQ Sauce 1 Onion - chopped very fine 1/4 c light beer (or water) 1/2 c Ketchup 1/4 c Dry red wine or beef stock 1/4 c Worcestershire sauce 2 tbs Vinegar 1 tbs Instant coffee 1 tbsp Murphy's Montana Red Seasoning and Dry Rub (since you don’t have any Murphy’s, Emeril’s Southwest or Cajun seasoning will work - but not as good) 1/4 c Brown sugar - packed 1 oz Margarine 2 tsp Lemon juice Sauté onions in margarine until golden and add all other ingredients.
