We rub the ham or roast with favorite seasonings then cover it with onions then wrap it many many times in aluminum foil. Dig a hole next to the camp fire, place the pig in it, then fill the hole back in GENTLY with coals and ashes from the fire. Let it stay there for about 5-6 hours, dig it up and ENJOY!!! SIDE NOTE: I canNOT eat wild BOAR. It HAS to be a sow or else I can't get anywhere near it. ( Stinks!!!) Quote Link to comment Share on other sites More sharing options...
oldksnarc Posted March 14, 2007 Report Share Posted March 14, 2007 Re: Help cooking wild hog Sow or boar same-same. In ground is best. Dig a pit 4' long by 4' deep by 3' wide. Burn hardwood (mesquite or hedge) in pit until coals reach up to 2' of top - will take a whole day or so. Wait until coals have green haze on top of coals. Cover with 3" of sand. Place pork with preferred seasonings in aluminum pan covered by foil and then place on top of sand. Cover pit with sheets of corrugated aluminum then another 2-3" of sand. Cook 4-5 hours.
