Ive made several batches using steaks and such and IMHO you never can cut the meat just right. If you can grind the meat, mix it with the seasoning, and then press it into strips you'll be a lot happier. Dad use to take his and let it just lay over the rack in the oven. Works pretty good. Im not sure how using ground would work over those racks, I have a dehydrator. Btw, id buy the seasonings. They are cheap and make great jerky. If you dont want to use or grind the meat, cut the strips as thin as possible. Again, use store bought seasonings (pre mixed). When you put it in the oven use the top rack and put a piece of foil on the bottom rack to catch the drip. Personally I wouldn't turn the heat up over 300deg. Id look more for something like 275.
