RangerClay
Ken, There are a couple jerky recipes in Andreas Venison Recipes post. I myself use nothing but the High Mountain Seasonings. They have the cure and the seasonings all together. I like the Pepper Blend the best but they have several other flavors. You can get them at any outdoor store. LifeNRA
I believe you can still use the High Mountain products in the oven. I would use either.................... Hickory teriaki(sp?) Garlic Black Pepper Original Bourbon BBQ http://www.cabelas.com/cabelas/en/templates/product/standard-item.jsp?_DARGS=/cabelas/en/common/catalog/item-link.jsp_A&_DAV=MainCatcat602009-cat570003&id=0012502513626a&navCount=4&podId=0012502&parentId=cat570003&masterpathid=&navAction=push&catalogCode=XG&rid=&parentType=index&indexId=cat570003&hasJS=true
wtnhunt
I myself use nothing but the High Mountain Seasonings. Same here. Favorites here are the hickory and mesquite flavors.
Snipe
I have used the Hi Mountain blends and they are good..Your jerky will have a longer shelve life... But I like the all natural jerky.. no Sodium Nitrite, Dextrose and Glycerine's.. 3Lbs Thin Sliced Venison 1/3 Cup Worcestershire 1/4 Cup liquid Smoke 1 Tsp. Onion Powder 1 Tsp. Red Pepper Flakes or Cayenne Pepper 1/2 Tsp. Garlic Powder 1 Tsp. Sugar 1/2 Tsp. Dry Mustard Mix all ingredients but the liquid smoke... Add a little of that at a time until you get the right amount of smoke flavor you like... Add more pepper if you like it hotter.. Put meat and marinade in a one gallon zip lock bag mix well and refrigerate over night...Next day drain in a colander, Heat oven to 200 degrees a little less... Put jerky in the oven and you are set... Enjoy..
