Guest blackeyed_susan Posted December 27, 2004 Report Share Posted December 27, 2004 Easy Caramel Popcorn 3 quarts popped popcorn 3 cups unsalted peanuts (optional) 1 cup firmly packed brown sugar ½ cup Karo syrup light or dark corn syrup ½ cup butter/margarine ½ tsp salt ½ tsp vanilla extract ½ tsp baking soda Spray a large shallow roasting pan with nonstick coking spray. Remove any kernels that did not pop. Combine popcorn and nuts in the pan. Bake at 250 degrees while preparing the glaze. In a heavy 2-qt nonstick saucepan, stir brown sugar, corn syrup, butter and salt. Bring to a boil over medium heat, stirring constantly. Without stirring, boil 3-5 minutes. Remove from heat stir in vanilla and baking soda. Pour over popcorn, stir to coat. Bake at 250 degrees for 1 hour, stirring every 10-15 minutes. Remove from oven. Cool; break apart.
