Jeramie
There is a butcher shop in Tulsa that makes Summer Sausage. Last year I tried some for the first time and it was simply amazing. Ive never had any deer that good. This morning the same guy called me (he's on a different floor) and told me to come and get some sausage from this past fall. I ran up and he hands me an entire sausage (about 12" long). He then sends me to the fridge for a frozen pack which turns out to be three in one pack. It is just as good as last years. AWESOME summer sausage. While I was there we talked about this guy. Come to find out he does specialty meats through the store. He only does venison on the side. He has to take it through the back door and process it in a different room (FDA stuff). He does venison on the side. Anyway, he also makes bratwurst and hot links. I guess the brauts are simply awesome. If you take in 40lbs of meat you get back 80lbs because the guy mixes in Pork, spices, peppers, beef, etc. Phenomenal flavor! Typically I will pass up small does but if one walks by early bow season she is taking a 55-mile trip in the truck to Tulsa! Im literally having the first doe I take made into nothing but Brauts, hotlinks, and sausage.... Its that good. Ive already eaten on sausage, now I need to go thaw the other three..... texastrophies
There is a butcher shop in Tulsa that makes Summer Sausage. Is the reason that you need it quick because he can't make Winter Sausage?
wtnhunt
Place not too far from here does a lot of specialty meats with deer like that. They are also fda approved and do beef, got a steer I need to take up there real soon. I know a guy who takes deer to this place every year, their stuff is good, but is it ever expensive. Think last time he told me he had a deer processed there it was like $120, but he had bologna and all other sorts of stuff made up.

buckee
You can bring him some frozen meat from last year, and he'll fix you up, I bet. My meat cutter does that for me with pepperoni. If I have left over deer from last year, I just take it in, and he makes some great pepperoni out of it. Ask Luke
