Bachflock
Not sure how original this is but I threw it together on a whim the other day when I decided to grill some salmon. I had never had kumquats before and had picked them up after seeing them at one of the grocery stores. The skin is the sweet part were the juice is as tart as lemon's in my opinion. This turned out GREAT! My wife isn't a big salmon fan but really enjoyed this. Let me know what you think if you try it. Citrus-Honey Glaze 1/4 cup - butter or margarine, melted 1/4 cup - honey 1/4 cup - lemon juice (I used concentrate) 5-6 medium kumquats, split and deseeded 2 TBLS whole pepper corns Mix all ingredients in a blender and blend for approx 30 sec to 1 minute. It should be somewhat chunky still. Baste on the salmon as it cooks ever few minutes. Stop basting approx 5 minutes before it is done to let the glaze thicken and it should set up nicely once off the grill.
