Tominator Posted August 14, 2007 Author Report Share Posted August 14, 2007 The sources I'm reading on the internet say to wrap the meat in brown paper grocery bags, then wrap that in wet newspaper, set it on the hot coals and wet wood, cover it up and let it sit for 8 to 10 hours. Guest Andrea Posted August 14, 2007 Report Share Posted August 14, 2007 Chris, is this the same as cooking a "pig in the ground"??? We do this all the time. VERY easy. Gotta build a bonfire first. Then season your meat well. We usually season a pork or venison roast and cover with onions. And then wrap it MANY MANY times with aluminum foil. Once that fire has been burning a while, dig a hole very close to it. ( Right at the edge of it) place the wrapped meat inside, cover gently with coal sfrom the fire. Cook for about 6-8 hours. I did a nice big Chinook Salmon up for a wedding one time, and it turned out great. Personally, I think a BBQ is a lot less hassle, with some tasty results. Smoke them with whatever kind of wood you want and they will come out juicy and great! I would use mesquite or hickory for wood! Use a rub and don't be afraid of using too much! The more the better! I think I'll try it. I remember waaaaaay back in the day when I was a kid, this church across the field where I lived did a pig or ox roast every year. They brought in a back hoe, dug this huge pit, started the fire, put the pig down in there and covered it for hours. Man, you could smell that pig all the way across the field. When they unwrapped it, it just fell apart. Got my son to dig the pit. Maybe I should experiment before the party. Ask Woody if you see him before the 19th Tom.
