You can cut it against the grain into thin strips and marinate it and then dry it out. That is good. Or You can grind it up (ground goose is disgusting!), mix in a jerky season and cure, load the Jerky Gun, and dry it out. WABS Posted January 5, 2005 Report Share Posted January 5, 2005 Re: Goose Jerky I'll tell you another good receipe for goose is to boil it and grind it, then mix it with spicy mayonaise (add other seasoning to taste - I add a little Smokin Joe Hungarian Seasoning) bring on the saltine crackers and you're ready for some major TV time.
