womanwhohunts Posted November 16, 2003 Report Share Posted November 16, 2003 I know what this is.Do you?Its a back quarter ready for cleaning.It you look real close to the center of the pic,you can see a round-like grey spot/lump.Thats a gland,a lymph node I think,its called.There are several in a deer.I've heard of folks that threw deer away because they found these spots.Every deer has them.Not many folks really look at them.I don't want it in my sausage. I cant really see the picture real good but if the gland or lymph node was on the inside of the hind corner or groin then It probably is a lymph node as there are several that run down both sides of the groin. Enlarged lymph nodes indicate infection or maybe lymphoma a cancer. Either way if the Deer looked healthy I would not think twice about eating the meat. Cut around the glands. I used to be abutcher before I went back to school to be a teacher. I guess I'm a poor srudent as I don't remember what type it is, throw them out though!!
