OJR Posted February 18, 2008 Report Share Posted February 18, 2008 Sunny Snow Peas 1/2 cup orange juice 2 Tbls honey 1 Tbls butter or stick margarine 1 to 2 teas grated orange peel 1/2 teas salt 1/8 teas ground cardamon 1 lb fresh snow peas or sugar snap peas In a small saucepan, combine the first six ingredients; bring to a boil. Reduce heat; simmer, uncovered, until mixture is reduced by half, about 15 minutes. Meanwhile, in another saucepan, bring 1 in. of water and peas to a boil. Reduce heat; simmer, uncovered, for 5-6 minutes or until crisp-tender. Drain and place in a serving bowl. Pour sauce over peas and toss to coat. Yield: 6 servings. Very good flavor to this side-dish! I just picked up another pea recipe the other day at the restaurant my wife and I went to. Sesame and caramel peas. Can't wait to try it. Maybe tonight depending on how the dentist visit goes.
