What type of plant works the best for providing nutrition in the spring and summer but will also still attract the deer in fall and early winter?

Perennial plots may be what you are after. Clovers/trefoil mixes are good full season plants. For annuals, have had pretty decent results here with lablab plus planted in the late spring leaving it standing into the fall.

for "almost" year round nutrition and attraction then perennials are the way to go.

Yep, chicory is good to. Usually plant chicory in our perennial plots with clovers and trefoil.

I like clover plots...perennial plants...they provide year round nutrition for multiple years. I mow them ever so often during the spring and summer to help thicken and regeneration. Let's face it...seeds are expensive and there is a ton of time involved in preparation year after year. In my opinion, a year round plant that grows year after year, mixed in with some peas and corn...gives a good variety.
