OJR Posted April 1, 2008 Report Share Posted April 1, 2008 SUMMER SAUSAGE 2 lbs. lean hamburger 1 cup water 2 1/2 tsp. liquid smoke 1 tsp. pepper 1 tsp. garlic powder 1 tsp. onion powder 2 tsps. mustard seed 3 tbsp. tender quick or quick cure 1 tsp. salt substitute Mix together until sticky, then roll 2 or 3 rolls as firm as you can. Roll in aluminum foil, shiny side to meat. Let stand 24 hours in refrigerator. Punch holes in bottom of rolls. I used a meat fork to punch the holes. Place on a rack in baking pan.
