aksheephuntress Posted May 4, 2008 Report Share Posted May 4, 2008 ...I was going to fix black bear brats tonight...but decided to hold those over in the ice box until tomorrow...giving them a good soak in the beer, and going to cook them up tomorrow... -Instead, I had pulled out a roast out of the freezer from that mtn. goat road kill we got 2 months ago, and have had it cooking slow in the crock pot all last night, and all day today... 4-lb mtn goat hindquarter roast Garlic onion rosemary basil black pepper sea salt Worchestershire sauce horseradish tabasco sauce maple syrup:p;) potatoes broccoli carrots water chestnuts -thickened with corn startch... ...Going to serve with fresh -buttered buns...mmmmm! aksheephuntress Posted May 4, 2008 Author Report Share Posted May 4, 2008 ...I just felt like I had to add a footnote..(or, a hoof-note...) :-the road-kill Mtn. goat we got was actually a billy that fell off a cliff 2 months ago, here,onto Lowell Point Rd.,accross Ressurection Bay... -The fish and game trooper brought him to us,right after he dispatched the bungled-up billy...so,he was real fresh...AND- to my surprise...he was a real tasty-even for being a ten-incher!! -No gamey,urine taste or aroma about him, at all...-we were truly blessed. ...Boy, and it sure looked out-of -place as I quartered him that afternoon on our snowy driveway!-looked like a WAR ZONE-LOL! HB ...Yeah...it was so tough! -The crock pot is definitely the only way to cook this one-especially since he was an old, 10-inch billy. -the tenderloin weren't too bad- -It is amazing...just finished it off this morning, with a bowl of it...and the meat is so tenderly shredded...and tastes like succulent beef!(looks a little more dark-reddish in colour, though...)-got better each day! -and I forgot to add some sage...so I did, yesterday...
