birdhunter39 Posted May 17, 2008 Report Share Posted May 17, 2008 mudbug ( crawdad ) gumbo 1 lb of cleaned and cooked mudbugs 8 oz of smoked sausage 1/2 lb of ORKA 1 med brown onion 1 can whole tomatoes 8 oz frozen corn 1 tsp parsley flakes 1/2 tsp cayenne pepper ( i put more ) 1 pnt of half & half 2 cups of water 2 tbl spoons of creole or cajun seasoning ( i put more ) cut the sausage into quaters cook until brown then add the onion ( same pan ) cook that until tender then add everything else execpt the mudbugs and the half&half let all that simmer for 15-20 min then add the rest let that simmer for 10 min Quote Link to comment Share on other sites More sharing options...

birdhunter39 Posted May 17, 2008 Report Share Posted May 17, 2008 i actually love cooking mudbugs ( crawdads ) by themselves , i buy two lbs ( i needs too find a great place to catch them ) i put cajun seasoning on them then i put them in the frying pan , anyways , what i do is i make a ton of the gumbo and leave out the okra ( it gets real soggy after unfreezing ) and put it in the freezer and thaw the gumbo as i need to then i add the okra . Heat oil in a large pot over high heat, add onions, celery and bell peppers, and saute 1 minute. Season with salt and 4 turns of the pepper-mill and saute 1 minute. Add the tomatoes, garlic, and shallots, and saute, stirring occasionally, about 4 minutes more. Stir in stock, then add fish, Worcestershire, hot sauce, bay leaves, basil, oregano and thyme, and bring to a boil. Cook over high heat, stirring occasionally, about 8 minutes. Reduce heat to medium. Stir in shrimp, okra and Bayou Blast, and simmer 10 minutes. Fold in oysters and crabmeat and simmer 5 minutes more. Skim the impurities from the top of the gumbo, turn the heat to high and boil vigorously 5 minutes. Slowly sprinkle in the file, stirring to incorporate thoroughly, and cook, stirring, 2 minutes more. To serve, ladle gumbo into bowls or soup plates, add rice and sprinkle with green onions.
