300fps will have a little flater trajectory on arrow flight. wich makes judging distances easier. If you use a range finder, or can judge yardage well, you would only be concerned about kinetic energy. An arrow, assuming it weighs between 300-350+ grains, flying at 280fps, shouldnt have a problem on most domestic game. A buffalo might give a run for your money.:D

It's all relative, like arvelocity said. It'll be more forgiving when it comes to judging distance, because it will be flatter. Both speeds will easily kill what you're hunting in the U.S. I'd just pick a bow that's comfortable and smooth, and practice a lot!
