It is a very small strip of meat, and the bigger ones are the only ones worth taking for it. Sheepshead are very common in these rivers up here, so my cousin did some experimenting...lol. I have caught some that swallowed a #5 Shadrap, and I had to put my hand completely in thier mouth to unhook it. bulldawg Posted August 14, 2008 Report Share Posted August 14, 2008 It is a boneless strip near the center of the fillet. On the big ones, it is only about an inch wide, and about 3-4" long. I tried it cooked the same as poorman's(dipped in melted butter), and it tastes delicious. The problem is getting enough big ones to make a meal. When you fillet the strips out, soak them in the refrigerator in a bowl of water with a shake of salt, for 24 hours before cooking them. Mmmm, good.
