hey whiskey have you ever taken any of your meat down to claiborne instead of stemble's they make some really good jerky and summer sausage?

haven't been down that way... It's hard to beat Stemble's jalopena and cheese summer sausage... good stuff. I'm always will to try something new though. There's also a guy not far from me that makes good ss and jerky... last name is Preston, can't remember his first. He just started his meat processing business last year.

I do my own with the help of my partner and brother in law. Still takes me a good couple hours to do one, but I like doing it boneless.

Anyone out there try any of the LEM jerky seasonings? I have for the past several years and I think they are the best. I make jerky and people say it is so good. Can't really take credit though as it's all in the seasonings.

All depends on my funds tbh lol. I have an old co-worker that takes the 2 weeks off from work and does a wonderful job processing. Costs me $90-$100 though and with starting school this year I will be cuttin my own. As far as making jerky I just buy the premix'd crap at walmart and do it in the oven. Turns out great!

On a side note I hear once you learn how it gets easier everytime! One tip my buddy showed me was to get one of those small gas torches.. If you have an area that you cannot get the fur off the meat just run that over it real quick and it singes it right off and doesn't harm the meat with just a passby.. Main thing with doing it yourself is to get the most talo off that you can. Talo is what makes the meat taste like crap when you cook it..

I've always taken mine to the butcher however I got a real good knife set and grinder and am going to try and do it myself this year. I found a video on the web that makes it look pretty easy.

Do you guys that do your own think it's hard?

A little time consuming, but not difficult. We are pretty picky and do a lot of trimming. Worst part for us is our two youngest kids not cooperating. When the wife and I can work together at the sink we can get done pretty quick.

On the jerky, we use hi mountain jerky cures, they are pretty good. Make our own sausage too, cabelas sells kits, lem sells sausage kits too. A grinder can pay for itself pretty quick too. Think we have done a dozen or more deer since we bought a grinder.
