Make sure you use the amount of water the directions tell you to use!!!

When I started to mix the venison burger up the other day, I noticed it seems a bit wetter than beef, more blood from being so lean I guess. So I opted not to add the amount of ice water the directions called for. Well, it all came out like crunchy bacon! :mad: I know the first batch of deer jerky I used the right amount of water. Not sure why I didn't this time! This wont happen again! But what a waste of good meat! It was only six pounds, but still!

Sorry to hear that John, but sounds like maybe you overdried it or dried in on too high a heat. I have made ground jerky on many occasions without using the suggested amount of water, matter of fact I have never measured out the water I add when I have added water and have not had my jerky ever be so dried that it was not edible.

Out all the jerky I made so far, this was the only batch I did not add the amount of water called for. We like the jerky texture that you have to chew it. So we dry it longer. Well, not adding that water really killed it. It just crumbled in your hands! Somebody at work suggested that we turn it into bacon bits for salads. Not sure I want to try that, but hey you never know!
