We just added spleen to our list of tasty deer organs. We'll eat the heart, liver, and kidneys from young deer and does, heart only from bucks because the liver and kidneys are strong tasting. We tried spleen from my little doe this weekend, it was really good actually! chewy but not like tough/overcooked chewy, and the texture is kinda neat. We saw Andrew Zimmern eating spleen alot of Bizarre Foods on the Travel Channel so why not... anyone else eat any of these tasty deer organs? Although there are no reported cases of CWD ever being contracted by a human, and I personally think the whole CWD thing is way overblown, the spleen IS one of the organs where there is a concentration of the prions associated with CWD. Beef spleen is good for catfish bait so I'd imagine deer spleen would be, too..... All venison (meat) is good if it is prepared and cooked right.
