Grilled over coals is the only way ive had them. However, a buddy and I are going duck hunting in about two weeks. We should limit out pretty easy. oldksnarc Posted December 17, 2008 Report Share Posted December 17, 2008 Only way I've had duck that I cared for was: Cook in crock pot for about 3 months to get all the grease out then pull it apart like pulled pork and put back in crock pot with favorite BBQ sauce for another couple hours and serve on buns. I do it a couple of ways first if you want to take the time i would debone the brest & marinate them for a couple days. then take a piece of onion, bell peper, bananna peper & the duck breast & rap them bacon. Here is another way i like them debone the breast marinate them & tenderise them with a meat clever. RICK Posted December 21, 2008 Report Share Posted December 21, 2008 best duck recipe soak duck or goose breasts in apple cider vinegar overnite, then butterfly them and stuff them with onions, jalapenos,and mushrooms then wrap with peppered bacon and grill serve with jalapeno ranch sauce to make sauce take a bottle of ranch dressing and finely chop up a jalapeno and add a little paprika, add jalapeno to desired heat slice duck breast about 1/2 in thick cross ways and drizzle sauce over them my kids love them so much they are always asking to go to grandpas to shoot some ducks so we can cook em up!!! Mallards and such are better eating. We used to soak in apple cider or pepsi then smoke them. Then we would pick at them with forks as a snack. Leo Posted January 20, 2009 Report Share Posted January 20, 2009 Soak breast meat fillets in buttermilk overnight in the refrigerator. Take them out and while they are still dripping, sprinkle them all over with Chef Reese Williams Cajun shake (Bass Pro carries it). Shake them in a bag of unbleached bread flour to thoroughly coat them. (Don't use self rising flour!!!) Put a 1/4" of Olive in a skillet on medium heat. Time and fry one side of the fillets until blood starts to come thru the flour on the top side. Flip and cook for the same amount of time on the other side. Serve the fillets on top of freshly cut and ripe Mango slices. Wild rice or Orzo makes a good side with this. Quote Link to comment Share on other sites More sharing options...

But generally with wild game and duck, fruits, wild berries and anything with citrus (oranges/lemons) makes great marinades and toppings. Just injected some cajun injector duck marinade, sprinkled with cajun shake, wrapped with bacon and put it on the grill.
