I used to think like that too....when I was a kid, people would shoot bear and drive around showing them off before they cut them up. Bear meat spoils very fast and you must get the heat out of the body soon as possible. This bear was brought directly from the woods to the meat plant, so it cooled right away. The brats and sausage I made from my bear a few years ago was good too. That darn stuffed bacon wrapped backstrap recipe from the forums here is now my favorite though.
