OJR Posted January 25, 2009 Report Share Posted January 25, 2009 ISLAND SPICED SALMON 2 Tbl brown sugar 2 Tbl chili powder 2 teas ground cumin 1 teas salt ½ teas ground cinnamon 1 salmon fillet (2 pounds) In a small bowl, combine the first five ingredients; mix well. Rub over flesh side of fillet; refrigerate for 30 minutes. Place skin side down in a 13-in. X 9-in. X 2-in baking dish coated with nonstick cooking spray. Prepare your salmon fillet with what ever is your liking, then place skin side down on a piece of Paper Grocery Bag slightly larger than the fillet. Grill till flakes. The skin sticks to the bag when you tip it upside down on a plate. Place right side up after you trim the grey belly lining off and enjoy!!!
