When it is slaughtered, cut & wrap, frozen they call me to come and pay for it and I am on the way home!:rolleyes: We will be eating good for some time to come and I am not tired from the "hunt" at all! I don't remember the exact count, but it is the lowest of all meats and compares to chicken on the cholesterol scale! It is extremely lean meat! Hardly any fat at all! The taste is great! Good to hear I'm not the only bison fan out there. How do you cook yours? This one cost us $3.45 per pound hanging weight! With it boned out, I am sure it will drive the cost up to about $4.50 per pound! That is the total cost, frozen and ready for our freezer. When you are doing buffalo, you have to do it real slow and low heat; otherwise, it is going to get tough on you! I use all sorts of marinades, crock pot for the roasts and several differenet ways for doing the burger. It is very seldom my wife and I get any beef at all. We are too spoiled with the buffalo! One of them was a vegan but couldn't resist the aroma of the meat and tried some. Well she was hooked and had 3 helpings. She said it was the best food she ever had and would eat bison every day if she could.
