Don't know much about them. I have smoked mullet, osysters, chicken on the brinkman but want to go large. Checked some websites did not see anything that was really useful. redkneck Posted February 24, 2009 Report Share Posted February 24, 2009 Man, that sounds fun. We have an old smoke house at my father in law's old place. It's about 8 feet wide by 20 feet long! Blocks about 2 feet high, and rough cut poplar nailed vertically all the way around, really beautiful old thing, but way to big and we dont smoke hogs like they did years ago. My deer processor made one that's about 6X6, all wooden construction, but he uses a propane burner so you dont need the blocks around the bottom. I'd think if your using real wood, then get your blocks about 2 high and just build the rest of it like you'd build a shed, making bars to hang your meat from. Fred]Hey Fred, I have plans for exactly what your talking about at home in a book called "Country Living". It's a coffee table style book with a plethora of information for the do it yourselfer. I'll bring it in tomorrow and scan those pages and post in here, okay? I'm building one myself this Spring out of an old metal oil tank on the side of the house. Used to hold the oil for old floor heating 20 years ago. One question that will determine your plans, are you wanting a cold smoker?
