CROCKED GOOSE/DUCK BREASTS Remove the breasts from 5 ducks or 3 geese (approx.) Cube the meat into bite size pieces. Coat each piece with seasoning salt, roll in flour and brown in 1/2 in. cooking oil. In a crock pot, combine the following ingredients: 2 pkgs. brown gravy mix 2 Tbsp. Worcestershire sauce 2 1/2 cups water 1 small can mushroom 1 small onioned, chopped Drain browned goose/duck meat and add to the crock pot ingredients. Cook on high for 3 hours, then to low for another 2 hours or until tender. I serve it over white rice, but is also great on mashed potatoes or noodles! Enjoy!! I been wanting to pop one of them big canadas but havent had one come near me so far, but seems like they are in everyone's pond around here these days to stay. pointing_dogs_rule Posted April 6, 2009 Report Share Posted April 6, 2009 I hate goose, however I learned this recipe 4 years ago and LOVE IT as do all my guests that I cook for. 1. Cut away breast. 2. tenderize with mallet or tenderizer machine so that it is about 1/2 to 3/4 inch thick. 3. Soak over night in 1/2 orange juice and 1/2 Italian dressing 4. Add 1/2 to 3/4 inch of 7-UP to a fry pan and heat to boiling then add breast and cook til done. (turn heat down to slow simmer after adding goose to fry pan.) It should cook in 10 - 20 minutes depending on thickness of breast. ultratec1 Posted April 12, 2009 Report Share Posted April 12, 2009 Cut the breast into 1" strips. Wrap the strips in bacon and place on a tin foil sheet. On the same sheet place a chunk of apple and a chunk of onion. Wrap the goose in tin foil,you can place about 3 bacon wrapped strips in 1 sheet of tin foil, then place on the grill. stevebeilgard Posted April 14, 2009 Report Share Posted April 14, 2009 here is my favorite. it tastes to me just like medium rare prime rib. it is cooked medium rare, which sounds disgusting for any fowl. but it it truely great. TRIPICAL GLAZED ROASTED GOOSE 1 medium sized goose, skin on cleaned & plucked 1/4 cup cooking oil 1 large clove garlic, brusied salt & pepper to taste 1 apple, quartered Tropical Glaze: 1- 6 oz can orange juice concentrate, thawed 1/4 cup soy sauce 1/4 cup sake (japanese rice wine) 2 tablespoon honey 2 tablespoons ginger preserves (available in the jam & jelly section of most grocery stores. if not available, substitute orange marmalade mixed with 1 teaspoon ginger) rub goose inside & out with oil and garlic. season well with salt & pepper. place apples in cavity to absorb excess oil. place goose on rack in a roasting pan. in a mixing bowl, combine all the glaze ingredients. spoon on top of bird. roast goose at 450 degrees for 45 minutes, basting every 10 minutes with the glaze. remove goose, and discard apple before serving. this recipe came out of american hunter magazine in 1978, and is the only way i've found a goose to be not only edible, but delicious. hope you all enjoy it.
