just got a smoke vault and need help

If you did not get any instruction in your owners manual, pretty sure you can find guidelines for meats on the internet. If not, I have a couple different manuals with suggested temps and times based on weight, I could come back when I have a little more time and post some of that.

Best advice I could really give is to get a good thermometer, preferably a remote thermometer, cook slow up until the meat is as done(to temp) as it has to be. Avoid overcooking meats.

this is my first time ever trying to smoke food. is there any website that is extremely helpful. i need to know more info about smoking. such as recipes and how long to smoke foods and for what temp thanks nathan

You can swing by http://www.smoked-meat.com and go the forums...Lots of help and info there..

Make sure you season your smoker before you smoke any meats.. Get yourself a good remote thermometer like the Maverick ET-73.. That way you can monitor the temp of your smoker and the meat at the same time..

BTW, I've only been smoking meat for 1 year exactly this month. And man, am I ever hooked! It's all I think about during the week and what I look forward to doing EVERY weekend. I smoked all through winter too, even in the "teens" a couple time....had a heck of a time keeping my Silver Smoker at temp! LOL!

LOL.:D Not a long time smoker here,;) but have been using a smoker for cooking meats for several years. Just picked up a butterball breast the other day to put on for a Mothers day meal this weekend. Gotta love a good hickory smoked bird.:cool:

Seriously, that site heavymetal mentioned above is wonderful with lots of super nice people there willing to share recipes with you.

Currently I am "between" smokers. By charcoal crapped out, and I got a brinkman gourmet on loan from the fire dept cuz we never use it up there, but i got to take it back one day.

I agree. And with this diet I've been on, there's been no room for butts, ribs, and such. Hard to beat a good piece of smoked turkey, I'd rather have it than ham any day if it's done right. :)

If you guys want some really good smoked meat try one of these Traeger smokers. I've had mine 2yrs and it is fantastic!!!! You really can not screw it up with this smoker.

Sweet Rig! I cut and cure all my own smoking wood/chunks. Those pellet/puck jobbers would never do for me. I checked out the link...they got some NICE stuff!:cool:

It's surprising how well those pellets work, they are easier and the flavor is every bit as good if not better then using wood chunks, without all the extra work. I've had guys that have smoked meat for years tell me my smoked meats are the best they've ever had.....My favorite is pork roast using maple.......:):):)

i am with you on that one...also look at Big Green Egg...Good tymes...BTW--i will take a good brisket anyday over turkey or ham:)

THE BLUE SMOKE GAZETTE .COM Lots of recipes for pork beef chicken turkey and fish. Ive been smokin for a lot of years and I can assureyou that the more you cook the better you will get. you will learn shortcuts to cooking times and get the same results as well as tederizing hint.
