We are having asparagus from the garden....and....lobster!:D And for desert, which we got into already, I made mom yesterday some miniature cheesecakes then we dipped strawberries in chocolate and put them on top...darn shoulda gotten a picture to post here:rolleyes: So what are you all having? Tonight's menu was chicken picatta, fresh asparagus wrapped in prechuttio ham, rice pilaf with a organic caprese spinach/baby romain salad with feta cheese. For dessert I whipped up (literally) a dish that our own Randy's wife gave me a recipe to while I was at their home during a deer hunt this past Thanksgiving. She called the "butterfinger dessert". Sue, a big ol Texas thank you for the recipes! The whole famliy gave it a big thumbs up tonight and #1 daughter said she was going to share it with her culinary class. redkneck Posted May 11, 2009 Report Share Posted May 11, 2009 We had fried catfish and bream, boiled shrimp, corn on the cob, cole slaw and hushpuppies. Man, that was the first fatty meal i have had in weeeeks! This diet has been tough, but dropped 20 lbs and pretty much got to where i wanted. But you got to splurge from time to time!
