You guys try these two if your looking for something different. 1) Rub your fillets down with yellow mustard and put back in the fridge for a few hours or overnight. Dont worry, I promise you wont taste the mustard! Just take them out of the fridge and roll in half/half flour and cornmeal with some salt and pepper. 2) Soak your fish overnight in some Bud Light Lime. It only takes a little, so if you dont drink, PM me and I can give you my address to send the excess to . Fry the fish the next day like you normally would. Let me know how you like it if you try it! It turned out good, and you cant taste the mustard, but did make the batter different because of the way the meal really grabbed onto the mustard. Well worth it especially for the crappie and bluegill. Just one tip for everyone that cooks fish. Don't overcook it. You won't believe the taste difference it makes when you don't over cook it. One good tip as well for cooking with beer batter, is to use flat beer instead of carbonated beer. The flour and baking powder react less fluffy when you use flat beer. I use corn meal/masa (corn flour) mix 1 to 3 ratio or straight masa and seasonings. It's also good with chicken breast, use either yellow or dijon, coat in mustard, roll in bread crumbs and bake.... OK, I've never eaten walleye, but I'd say it's equivalent at best to a good rack of ribs and beans. I really worry about Orlan. I'm afraid one day his cholestorol is going to fall to a dangerously low level, and if someone isn't there with a hog jowl, he may slip into a coma! But last night I had some fresh peas with some boiled okra, fresh tomato, squash, and cornbread with a nice fresh banana pepper. I'll stack that up with anything you can throw at me!
