horst Posted February 9, 2005 Report Share Posted February 9, 2005 Last night I bought the High Mountain Jerkey Master.I have some deer up at the locker being ground into burger so I thought Id try this out.Used the seasoning mix that come with it and made a batch outta hamburger last night and it turned out pretty good, nice uniform pieces, more tender than the strips of meat seem to be and good flavor considering I rushed it and only marinated it for 3 hours. Only problem Im having is on the cooking time, I made two batches now and think I needed to let em both cook a little longer but i like mine a little chewier anyway.Anyway, if anyones been skeptical about buying one of these they do work pretty slick and come with another end i havent tried yet for making sticks. I used Cabelas mix and let sit in the fridge overnite to cure. Next day I shot it onto the screens and popped it in the oven. Mine took about 5-6 hours per batch. This year, I got a LEM. It is industrial duty! I mix up the burger with my favorite jerky cure/season mix. I let the mix set in the fridge in sealed bags for three or four days (the longer the better). The shoot the meat on my dehydrator trays. 4 hours per batch and it is some of the finest eating you can have. My kids love it. Heck, I turn everything into jerky anymore. Deer, hog, goose, duck, even the thigh and leg meat from turkeys. Good stuff. They guys at work are always hounding me to bring them jerky. AJ, how big of strips does your make?Mine are about 3/4 inch wide but it only takes about 1 1/2 hours per batch.Course I only got one rack cooking to, how much meat does the 3 tier rack hold? Each tube is about 1.5 pounds of uncooked jerkey. I make the strips 1" wide and the length of the rack (about 16" long). I give them about 1/2" - 3/4" clearance between strips. With 20 trays I can do ten pounds of burger! I also have the Cabela's Jerky Blaster, the big one. I also use about 8-10 different flavors of High Mountain Jerky seasons. Going to have to break down and buy a bigger jerky gun though, the one we have is an american harvest brand too I think and it does not hold much. Have tired a couple of the cabelas cures and the high mountain hickory and mesquite. Think the high mountain cures are the favorites here. Yeah, I think High Mountain are the best! I use beef burger the rest of the year! But the biggest mistake people do is buy the cheaper burger! It will be the best if you buy the leanest beef burger you can find! My wife and daughter cant stay away from it! I heard of people doing their jerky in the oven. Seems to be harder, I am sure it works, but this dehydator to me is the best! Now you could buy the commercial models. Bigger bucks needs, as in money! As far as the texture, it is a little different. Much easier to chew. It is comparable to a commercial beef jerky sticks kind of like slim jims. Cool thing about the jerky shooters, you can also make snack sticks like pepperonis and other flavors in different sizes that are round. The kids love them too. I was rummaging around my freezer for roasts and ran across 5lbs of ground. I don't think I'll be making burgers out of that stuff anytime soon, so I thought about making ground jerky out of it. But with the ground beef (or venison) I can make tens pounds which fills two gallon size zip-lock bags. They will be gone in a week or two! I have gotten to the point now where I rather use ground meat. I just brought home two bags of Wild Bills Jerky, which is my wifes favorite. She told me she likes mine better! Give it a try! horst Posted February 21, 2005 Author Report Share Posted February 21, 2005 Re: Jerkey gun Matthew, I tried the Bourban BBQ myself last week and it had very little flavor to it.I made 4 lbs of jerkey yesterday and kinda experimented with it.I added about 1/8 cup of of liquid smoke and an 1/8 cup of Worsterchire{SP?} to it along with the water and it really gave it a good taste with the mesquite and the hickory seasonings, it would probably help the Bourban seasoning as well. Not very much flavor and for whatever reason, the consistancy of the jerky is different than with the other flavors. I tried it twice because I figured I must have screwed something up the first time. Had a bad second experience with it too. Not going to use that one again. On the dehydrator,, I have never tried using our oven, but with our dehydrator it turns out pretty good. Maybe your father in law let it go too long. Doing jerky this way is alot easier to clean up which the wife loves that. I bought an excalibur dehydrator, which was a little pricey, but now making jerky is not an all day affair. I never rotate trays, and mine stays on for 8 hours no more! I mix the ground meat and let sit over-night so the cure and season set in. PERFECT everytime!!!
