Its just best to use the leanest meat you can find! 100% deer burger would be great, but I do not like burger this lean. I use though out the year 93% beef with 7% fat. I have used 90% already. Have nto had to, but probably will this year, good thing we have a 1200 lb steer walking around the pasture ready to go to the butcher. Guess you could buy some cheap cuts of steaks or roasts if you wanted to use beef, then trim it how you want it before grinding it up. London broil makes some good jerkey. I trim all fat and either run the steak through the slicer for typical jerkey or grind it myself and make ground jerkey.
