Good to eat, high in fat (wayyyyy high) if you can get past the smell of hog crap! I only eat them about once a year and I'm good! Cracklings are the skin of the hog and the fat attached. In the old days when ppl would render the oil from the skin for cooking, you had the fried skin left behind. I'm sure you've eaten pig skins at the store (i guess you got them up there) but they're nothing like what the real thing is. We'd have a huge black iron pot outside and build a fire around it and you'd bring the skins to a boil in their own fat. (gotta have a big oak limb whittled into a spoon too ) This is nothing like we do hogs these days by pulling the skin off and throwing it away. guys used to scrape the hair off and you ate everything from the rooter to the tooter!
