Who else in here is an all-out salsa freak?

Crap Mike, I just ate 2 blt's and some salsa, but you're making ME hungry again. Cant beat salsa on eggs. When I used to go to Mexico quite a bit, they served salsa verde with breakfast, and man is it good! Those little green tomatillos, chili peppers, onion......SPICY!!

I really dont have a recipe, but rather just add stuff as my gut tells me to. Was hoping some folks here might share the holy grail of salsa with me. My mother used to make THE best canned salsa and put it up in quarts, but man that was work.

Will post some pics here in a while John. First batch we made this summer was pretty warm, out of 11 pints made(canned) I think we have 7 left unopened and my oldest daughter and I are about the only ones really eating it. Too hot for the wife. I need to try to make more today. Need to go out and pick some more jalapenos and cayennes after the garden dries out a little, and some bells too if we have anymore ready. We have about 25 cups worth of tomatoes in the fridge ready. Lots of chopping to do today.

Making you hungry eh, how about some pics to help out. This was the first batch this summer. Only part of a recipe I really follow is the quantities in cups and the amount of vinegar required. Got to keep it right to avoid botulism. Only thing I add to mine you have not mentioned is a little cumin.

Wife and I canned some salsa from the garden several years ago. Better than any store bought. But, like camoman said our favorite now is the fresh stuff made from scratch, no cooking, just fresh tomatoes, green peppers, jalapenos, onion, garlic, heavy on the cilantro, some lime juice, salt, pepper, cumin for seasoning and a little sugar.

1 medium onion, finely chopped

3-4 large tomatoes, chopped

1-2 green bell peppers, finely chopped

3 Jalapeno peppers, finely chopped

1 tsp garlic salt

1 tsp pepper

1 tsp cumin

1 tsp sugar

juice of 1 lime

Mix all ingredients in a bowl and stir in juice of lime. Adjust seasonings to taste.

All this talk, and Williams pics have got me making a mess in the kitchen as I type.

Looks like this batch is going on tacos though.

Man I love cooking, just don't so much like the cleaning part.

Bought 2 extra giant sized bags of the "on the border chips" from sams club last time I was there. Need to pick up a couple more next time we get over to sams.

Ended up with another 5 quarts today, with working by myself and breaking up fights between my two youngest daughters I got no pics of the process, but could snap a few of the canned finish product. Got quite a bit of sauced tomatoes leftover I need to do something with, guess I might just go on and can them for spaghetti sauce and chili. Should have more tomatoes ready this weekend, got loads of jalapenos and cayennes ready. We won't be buying any salsa, picante, or taco sauce anytime in the near future.

Batch from today is a little milder than the last batch and more tomatoes as per the wifes request.

Great pics, William. My bell peppers barely got the size of peaches this year, but I usually chop one or two up in there too. Got home late tonight and the girls already brought up another 5g bucket almost full of tomatoes to throw on the pile. I got work to do this weekend, but we're going to be bush-hogging at the camp most of the weekend.

I hear ya there, same here.:)

My MIL likes hot stuff so I made her up a special batch and even replenished the Scoop supply in both homes. Will call her in a bit to see if my concoction compares to okie's sphincter blend! :bat:

You guys are right in making it yourself in bulk quantities. Mine was just a test run of about a quart. Hopefully I can duplicate on a larger scale to jar.

I'm out already and still have half a bag of chips left lol

We love the fresh, too. Our tomatoes aren't on yet, but it's getting close. I think it has been too cool up here by the Michigan line.

Canning tomatoes is a lot like work...we blanch and peel then freeze them in quart bags. IF all the grocery stores shut down, we will live on tomatoes and venison.

My sister gave me some tomatoes,bell peppers,jalipeno peppers,cayan peppers from the garden last night out of her garden.I have never made any salsa before but my sis gave us a jar she made and it was great.I am headed to town now to get the rest of the stuff needed to try my hand at makeing a quart or two and see how it comes out.I think I have already messed up and havent even started,I was cutting up peppers and rubbed my face with my hands.I feel like my face is goiing to melt off.

Think the habanero sauce I use at the restaraunts we go to is called "el yucatan" or "el yucateco" or somethine like that, good stuff for sure.

My retired neighbor said jalapenos are not hot enough.:rolleyes: The wife and our oldest daughter have been stopping by visiting him when they ride bikes in the afternoons. He told them that he loves the hot stuff, he hits the Mexican restaurant in town and has to add the habanero sauce to everything including the salsa they serve.:eat: I like the habanero sauce too, use it on my enchiladas when I eat at the authentic Mexican restaurants.

Anyhoo, gave the neighbor a pint of salsa from the milder batch I made the other day(used jalapenos and cayennes in that batch), before he tried it he told the wife he might have to add some habenero to it to doctor it up a bit.;) Well he stopped by yesterday and said he loved it and said it was just right, I gave him another pint.:cool2:
