I really never had a recipe, but have used Dale's steak sauce or worcestershire, and some tobasco for a little heat. Really kinda hard to screw it up, but there is a fine line between getting it under cooked and cooked to a crisp. Just have fun with it! Double or triple as necessary for the amount of meat you have. 1 1/2 pound roast 1/2 tsp salt 1/2 tsp garlic powder 1/2 tsp pepper 1/2 tsp onion powder 1/4 cup soy sauce 1/4 cup Worcestershire sauce 2 tsp liquid smoke 1 tsp cayenne pepper to taste 1 tsp to 1 tbsp red pepper flakes (to your desired hotness) Slice meat into strips no thicker than 1/8 inch thick. Combine all ingredients into a large bowl with an airtight lid. Add meat and marinade for at least 12 hours in refrigerator turning every couple hours. Dry in de-hydrator or in a warm oven. If done in an oven set oven on 110- 120 degrees. Lay meat flat on a cookie sheet or hang from grates with toothpicks or skewers. If in oven on cookie sheet, half way thru the drying process, flip meat. Takes about 6-9 hours to dry in oven depending on how thick your slices are. House will "stink" like jerky. backwoods07 Posted July 29, 2009 Report Share Posted July 29, 2009 I've had pretty good success with the jerky seasoning kits. Oldksnarc's recipe sounds pretty good. Make sure you don't skip any ingredients!! I did that once and it was a disaster. My house didn't "stink" like jerky. It "stank" like rotting deer.
