hutchies
I have owned many bows that you could not see the entire ring. However here is how I setup. 1. Find the center of pull and install d loop.......... by using a bow square and centering the nock to run level dead center of the berger hole. 2. Install rest and set to level. 3. Find approximate center shot using laser tool 4. Check centershot by Paper tuning 5. Have person draw and anchor with eyes closed. Mark the spot and install peep. After installed have them draw again and fine tune peep height and rotation. Tie in peep. 6. Install sight and approximately line up left/right on sight using laser tuner. 7. Sight bow in and walkback tune.
ShortDraw
On most mathews when your bow is PROPERLY paper tuned your rest will actually be to the right of center. As others have said, your sight has nothing to do with tuning. the bow shop owner is clueless. If possible, you could build your own paper tuner and do it yourself. However, speaking for the owner of the shop. Perhaps what he meant was that if he moves out the sight and your adjust your rest accordingly, the bow would be out of tune. When your sight was into the riser where were your arrow hitting? Good Luck
hutchies
The easy fix here would be just to buy a sight with a smaller housing and it should clear the riser. Most right handed target archers will tell you though that a slight high left tear is favorable.
