Red beans and rice

Not really a recipe posted here, just finishing off some leftovers. Thursday morning threw two packages of beans in, jalapeno and cheese deer sausage, onion, and Toney's seasoning into the crock pot before I left for work. Got home and whipped up some cornbread, top with cheese, black pepper, and fresh sliced onion.....Dude, it don't get no better than that. Pour over some rice with plenty of pot liquor. Simple meals are the finest. :eat:

I can visualize it but I just like looking at the pics.:clown:I have never had red beans and rice before but after seeing this thread i bought some zaterans red beans and rice mix at the grocery store last night.I hope it is good,think I will add some smoked sausage to it.

Whoa whoa whoa! First off, zateran's is ok, but it's more for a quicky like 20 minutes of preparation time. BUT, you aint getting the real thing, lol. Pick up a bag of dry beans, wash them off good in the sink, drop in the crock pot with a couple of sliced onions, and a good amount of your favorite creole seasoning. Add in as much smoked sausage as you like, and cook for several hours. You can also do it faster in the oven, but I like to just cook it all day in a large crock pot. Then do your rice at suppertime and pour the beans and sausage over it. Shred a little cheese and a little chopped onion, and lots of black pepper if you like. I just didn't want you to think that the zataran's was the real thing, lol. Homemade stuff is way better, and really is one of the best, cheapest, and simplest meals a fella can make.

I'm sure you'll find something. There's really no recipe, just cook them slow and season them up, add some sausage and onion. One thing though: if you do like I do and put them on in the morning and will be gone for quite a few hours, add some extra water, they'll soak up more than you think they will, and you dont want them to boil dry.

I looked up red beans and it seems that they are indeed kidney beans, but like you said, a smaller darker red version. We don't have them anywhere up here so I'll use the regular ones.

Thanks for the tip about the extra water. I'm at work for 9 hours and it would be very disappointing to come home to a dry pot of inedible "stuff".

Steve had some awesome venison sausage made last year that would be just right for this dish.:eat:

We think we may have found some at the store I work in. We're undergoing a full reno right now so everything is all over the place and may take some time locating the stock but it sounds right. The kidney beans here are normally labeled as just that "kidney" beans but these are labeled "red kidney" and I'm told are smaller than normal.

Thank you for the thoughtful offer though, and I'll get back to you if they don't pan out.

They're packaged as a "red bean". I think they are red kidney beans. They are definitely much darker red than the typical kidney bean.

Lipton sells a packaged red beans and rice that is in those rice envelopes, think it has Knorr as the brand at the top of the package with lipton out to the side. Pretty darned good if you add some cayenne and some good homemade salsa to it. That was what I had for lunch today.:) Have tried the zatarans and think the lipton is actually better.

The "red beans" that I have always had have had more of a pinto bean taste/texture than a kidney bean taste/texture. Leo gave a tip/recipe on using black beans in chili, last few times I have made chili have used black beans along with bush's "chili hot beans", imagine you could probably also make black beans and rice and it be similar to red beans and rice. Not really a right or wrong way to make this stuff.
