Red beans and rice, and chicken?

Will post pics later, but I was wanting to go get in the stand this afternoon, and since I didn't work today, felt like supper needed to be ready when everyone got home. I used the last of the deer sausage last time I made beans, so I got out a bag of smoked chicken to season things up. I'll let ya know how things went.

You just cant mess up red beans and rice William! Last time I posted a recipe, Diana had to ask what a red bean was, lol. For some of us, staples are a rarity for folks in other parts. I'll post some pics later and we'll see how it turns out. On a scale of 1-10 I'd say it will be hard to drop below 8 :clown:

First time I've made it with smoked chicken. Turned out pretty good, but the sausage is way better.

Didnt have a lot of time, so I boiled them a few minutes for starters, I'd prefer to put them in the crock pot earlier.

Chopped up two onions, added creole spices and my chicken.

Serve over rice, and you gotta have some cornbread, lol. I was OUT of cheese to shred over it!

That looks soooo good. Your crock pot is HUGE!

I haven't had a stove for a few weeks now so all cooking is in my electric crock pot or .... yuk....the microwave.

I did manage a nice feed of some honey/garlic chicken that lasted us a few days and a nice big moose roast. I don't want to make the beans and rice without the cornbread, so it'll have to wait for the oven.

From your pic it looks like the same beans we found. Can't wait!

Dont really have a recipe, lol. Just use some cornmeal, a little flour, egg, and milk. My wife makes it better than I do, but neither of us measure anything. Before my father in law died a few years ago, he would still grind his own meal every year. That was the best bread around. My mother also makes some good bread. She basically fries it on top of the stove in a little iron skillet that's got all them little triangle shapes in it. Great crust, and when one side's brown, she takes a fork and flips it. My personal favorite are the good 'ole "hoecakes" where you cook them like pancakes. The thing is almost all crust, hard to beat with a bowl of soup.

Redneck some of that started to sound like "Fried Corn Meal Mush"!!!

(cooked cornmeal set in a loaf pan overnight in the fridge to setup firm, sliced approx 1/2" and fried crispy, then served and eaten with maple syrup)

Hey, now you're talking.......Luke's maple syrup.....mmmmm.

We're going to need a recipe book just for cornbread!!:clown:

First pot there looks like a pressure cooker.

Cheese on cornbread, might try cheese in your cornbread along with some peppers(mexican cornbread).

First pot is a pressure cooker, lol. I was speeding it up on the stove top.

I love mexican cornbread, but just wanted to make sure she understood I was talking about cheese on the beans, lol.
