Will post pics later, but I was wanting to go get in the stand this afternoon, and since I didn't work today, felt like supper needed to be ready when everyone got home. I used the last of the deer sausage last time I made beans, so I got out a bag of smoked chicken to season things up. I'll let ya know how things went. For some of us, staples are a rarity for folks in other parts. I'll post some pics later and we'll see how it turns out. Didnt have a lot of time, so I boiled them a few minutes for starters, I'd prefer to put them in the crock pot earlier. Chopped up two onions, added creole spices and my chicken. I haven't had a stove for a few weeks now so all cooking is in my electric crock pot or .... yuk....the microwave. I did manage a nice feed of some honey/garlic chicken that lasted us a few days and a nice big moose roast. I don't want to make the beans and rice without the cornbread, so it'll have to wait for the oven. From your pic it looks like the same beans we found. Can't wait! Thanks for the pics! I make up a double batch and then I'll mix in rice and freeze a batch in a gallon bag. Then on those nights you get in late, and nobody feels like cooking, I just throw it in the microwave. redkneck Posted October 10, 2009 Author Report Share Posted October 10, 2009 Dont really have a recipe, lol. Just use some cornmeal, a little flour, egg, and milk. My wife makes it better than I do, but neither of us measure anything. Before my father in law died a few years ago, he would still grind his own meal every year. That was the best bread around. My mother also makes some good bread. She basically fries it on top of the stove in a little iron skillet that's got all them little triangle shapes in it. Great crust, and when one side's brown, she takes a fork and flips it. My personal favorite are the good 'ole "hoecakes" where you cook them like pancakes.
