Bacon Wrapped Venison Back Strap With PICS

So I made this a wile back, it's good you'll like it.

What you need

1. LARGE skillet

2. 1 half a back strap

3. 1 standard pack of bacon (any style or flavor)

4. Extra virgin olive oil.

5. Salt and Pepper, and anyother seasoning's you enjoy.

6. Box of tooth picks

7. Large baking sheet

8. Cutting board (optional)

9. Your oven

What to do

1. In a large skillet brown the back strap in olive oile on all sides for about 2-4 minuets per side.

1a. Pre heat oven to 350

2. wile browning lay bacon out on a large cutting board or on the baking sheet. The bacon should over-lap forming a bacon sheet with no gaps between bacon strips.

3. Next after the back strap has been browned on all side and seasoned with salt and pepper to your liking (other seasoning optional) place the strap in the middle of the bacon sheet and begin to wrap bacon strips individually up to the top of the strap, trim off extra bacon ends should only about an 1 inch of over lap on top and hold in place with a tooth pick. Continue this process this the entier strap is covered. Use left over strips of bacon (typically 5 to 6 strip left, this is optional if you run out of bacon wrapping the strip) to seal the ends of the strap. (SEE THE ATTACHED PHOTOS). Can also salt and pepper the bacon once it's wrapped up.

4. Spray sheet with cooking spray and place the now bacon wrapped strap in the center of it. Set in the middle of your oven and bake for 30-35 minuets. After 30-35 minuets turn the broiler on and STAY at the oven. Rotate the strap as the bacon browns and crisps (this step is all on the eye ball) One you have gotten all sides to crisp quickly remove from oven and place on cleaned cutting board for 5 - 8 minuets for the juice to set up a bit.

5. Cute and enjoy...it's bettern than any piece of filet mignon you will ever have in a store.

Cooked, We couldn't wait and cut into it a bit early but you can see the great juice. It comes out just a bit past medium.

DUDE!!! Now that is one sweet looking venison loin.... Not only cooked to perfection.. But a Outstanding Bacon Weave.. Bravo!!!

You know I would have smoked it....;)

lol well thanks for appriciating my bacon weave...think I learned that on martha stewart...or maybe I just made that up my self...humm

I bet it would be great smoked...just dont have a way to do it...I was considering using my grill but my grill is a piece.

HAHA...well...ACTUALLY, I'm totally out of ven right now...IF I kill something quick I'll let ya know...lol

Well, Andy's got six deer in the freezer already and I'm hoping to get one this weekend after rifle season and I'm SURE Andy will be killing at least three more with the rifle. We will have no shortage of venison, so you know, if you need some to make that, we can provide it. :clap:

I tried this last night and it turned out awesome! Definitely will be doing it again.

You need to post that one too, it sounds like some good food in the making.

Also glad I didnt make it to the game Sat!

Not too hard. Marinate, butterfly cut the backstrap, throw some cream cheese and jalapenos in the middle and throw it on the grill. Probably my least favorite thing to do to my backstraps though.

BTW- I wish I hadn't made it to the game.
