The_Kat
Well I layed out some backstraps the other night and was gonna make a new dish I saw on the internet. The recipe called for backstrap, a green and red bell pepper and an onion all cooked together mixed with beef rice. Well upon cooking it I decided it needed some help and before I knew it I had an awesome swiss style venison steak. What you'll need..... Backstrap 1 green bell pepper 1 red bell pepper 1 small onion 2 cans diced tomatoes 1-2 cans tomatoe sauce white rice ( serves 6-7 ) Cut backstrap into small bitesized strips. Slice the bell peppers into strips like you see in fajitas and chop the onion. brown back strap in a tablespoon of oil and season to taste with salt n pepper. I tend to use alot of salt. One it is browned, drain most of the juices but save a little for flavor. Once drained add the peppers and onion and cook about 5 minutes. Next add the diced tomatoes and the sauce. Turn heat down low and cover. Let this simmer for at least 35 minutes. The longer it goes the more tender the meat is. Cook rice...... Serve with rice covered in the steak and sauce. It may need salt added.....just depends on your taste. It was quite delicious and was discovered completely by accident. Try it and enjoy!
