Plucked whole Mallard.

Rubbed down with steak rub.

Let sit in fridge for 24 hours.

Preheat oven to 300.

Place duck on roasting pan.

Fill inside with homemade Strawberry jam.

Place in oven for 1 hour, increase temp to 325 for 15 minutes, pull out wrap in foil and let cool for 15 minutes.

Pull breast meat and legs off, eat and slap your grandma.

Wish I had a dang smoker, this was my first attempt in the oven. Don't get me wrong, it was fantastic but the smoker is still number 1 in my book.
