Canada goose summer sausage

My brother takes 12 geese breast and has summer sausage made[25 lbs a batch].He has had some made with pepper cheese and he also has had some made with no cheese.Everyone here will eat the goose summer sausage before they eat the deer summer sausage.It cost about $7.00 for a 3lb stick.Try it you won't be disapointed!

That sounds pretty good. I've been grinding mine up and adding Italian seasoning to it and using it in spaghetti and stuff.

Sounds great. I plan to make goose jerky with my goose breasts.

Have you used drumsticks for sausage, jerky or whatever.

Im thinking of grinding the drumsticks, mixing 27lb with 1 lb bacon

and lbs pork. using cabelas original summer sausage ingredients tht i normally use to make my deer and elk sausage.
