I took these to the local hometown bar.Left plate was deer and the right plate was goose.I made stone cold's deer bites.There were no leftovers to bring home but I got lots of free drinks from people.I had lots of people wanting to know how to make the deer bites."best deer I ever had" was the most common responce.{deer bites was still smoking when I took the picture}

Did I understand this right? you made summer sausage out of goose.Man I have never heard of that before,I would like to try that.

Yes,My brother has it made.It takes about 12 canadian geese for a 25lbs. batch.He has pepper cheese added to it.The goose summer sausage always gets ate before the deer summer sausage does.It happened that way last night and it happened that way at my brothers poker party.

Thanks for the great comment! I am glad it was a hit! My wife was on my butt last night on doing some more. I can not handle much right now due to knee surgery so hearing that sheds are dropping too is killing me. They just took out my 27 staples yesterday. I hope I can walk soon I want to get out really bad. I am not used to sitting on my butt and that is driving me nuts. I think that is why my wife wants me to get doing my cooking. LOL
