Prairiepredator
I have always wanted to try eating rabbit, so I just have a few questions. Have any of you guys ever ate them before, and which is better, jackrabbit or cottontail? Is there any things like sicknesses or diseases you have to worry about with rabbits? If you guys do eat them at all, what is the best way to cook them?
redkneck
Well, you can just throw one in the crock pot and spice it up and cook it all night, the meat will fall off the bone. Work it into a nice thick gravy, add carrots and taters if you like to make a stew. I personally like to boil it or pressure cook it till tender and then season it up, flour it and pan fry it slowly and make a gravy out of it and serve with biscuits. Cottontails may be more tender, but there's some big backstraps and hindquarters on them swamp rabbits. Or..... you can do it this way: http://www.realtree.com/forums/showthread.php?t=440&highlight=rabbit I aint got a clue as to what half the spices are in there that Ken uses, but I'll bet the farm it's some fine eatin! Hoosierbuck
I do rabbits and squirrels just the opposite of redkneck-I dredge in flour/salt/pepper and brown in skillet, then pressure cook them. Pretty darn good for plain Jane. HB
woolybear
Last time I had rabbit was in a bean, cheese and noodle casserole with a creamy white sauce. Ohhh man was that ever good.
