HUNTINGMAN Posted March 25, 2010 Report Share Posted March 25, 2010 I had a brisket in the freezer and layer it out to cook last Thursday,that didn't happen for I was sick. I got up early this morning and fired up the smoker with some crab apple wood and brought it up to temp. I trimed most of the fat off but left enough for flaver and moisture,stabbing my hand in the process. I rubbed it down with some McCormicks pork rub and added salt and pepper. I placed a pan of water under it and began the smoke job. I smoked it unwrapped for an hour and a half,then brought it in and wrapped it in foil. I poured some apple juice on top of it and sealed up the foil. I finished cooking at between 200 and 300 degrees for the rest of the time. I cooked it for a total of 6 hours,it came out great. Realy fall apart tender and juicy. It's alot better than the first one I cooked,I think wrapping it helped,it didn't have that realy strong smoky taste and stayed realy juicy.
