BearClaw
I'd like to get into sausage making and smoking sausage. I saw a Brinkman Smoker at Wal-Mart for $37.00. I don't want to make a big investment until I see that I'll stick to it. Is that a good smoker? Pros and cons?
Wobbly_Alaska
for smoking sausage... you really want a smoker you can regulate the temp on.. 160-180 -200 degrees in those steps are required for quality sausage... i use a propane fired binkman and make plenty.. i like to hang them in the smoker. wtnhunt
Used to use a brinkman charcoal smoke 'n grill and it worked and gave great flavor. Never used it for sausage though and not so sure how the top loaders with trays would work out, may be a bit more trouble. Used that smoker for several years, have a masterbuilt electric now, much easier to use and keep consistent temps a bit better.
Snipe
It can be done with the ECB (El Chepo Brinkmann) But you would need to do three things. Do some modifications to the smoker, use the minion fire method, and baby set it from start to finish... It is alot of work going that route. So with that said, spend a little more cash and get a propane or a electric vertical that you can adjust the temps on..
BearClaw
Thanks everyone for your advice! Looks like charcoal is not the way to go!
gzilla45
I've been looking at getting into smoking myself and it appears I'll spend a few extra bucks to get a propane smoker. Thanks for the info on that. Does anyone know of any books or websites that contains info for the newbie when it comes to smoking? I can't probably figure some stuff out but want to learn as much as I can first.
OJR
I bought this book at Hastings. It is "Championship BBQ Secrets for Real Smoked Food"! Lots of good things from rubs, marinades and smoking recipes. Everyone I have done from this book has been great!

bfletch7441
Propane Schmopane. Nothing like smoking with wood, and only wood! It's a little more work, but it's worth it IMHO. Ben

HUNTINGMAN
Theres nothing like sitting around watching the smoker and tending the fire. A cold adult beverage goes great and helps pass the time to.

Weve been smoking from a 50's style fridge converted to a smoker for over 30 years. Ever since i can remember we would go spearing carp in the creeks and smoke them the next day using cherry wood , nothing like it!
