I believe the recipe calls for 1/2 cup of hot sauce and 1/4 cup of butter. Melt those two together and toss over the wings. I actually found that I prefer my wings baked rather than fried. When they serve lunch there's always some sauce in a huge container with a squirt top thingy on it. I love it, but only recently saw them filling it and saw that it was Frank's. Personally I like them grilled, then coated with Louisiana Supreme Wing Sauce. I've tried pretty much all the other sauces made by Kens, Franks, kraft, etc. and the straight Louisiana Wing sauce has them all beat IMHO. It has just the right amount of kick and tang for the pure hot wing. You can dress it up with more hot sauce for extra kick. Leo Posted July 23, 2010 Report Share Posted July 23, 2010 I use the Tabasco Green Jalapeno sauce instead of Franks Red Hot and butter. Melt 1/2 a stick in a medium bottle's worth of the Tabasco green. I'll either bake or grill the wings completely done and then shake them in a covered bowl to coat them with the sauce. It's no hotter than Franks Red Hot and I actually like it better. It makes Green wings that are great for St. Patrick's day cookouts. Snipe Posted July 25, 2010 Report Share Posted July 25, 2010 I keep mine simple.. I take 1 1/2 cup flour and mix in 2 TBS Chipotle powder.. I use water to wet the chicken.. Milk will burn, the water will evaporate.. Bread the wings and let rest for 20-30 minutes... The flour on the wings should look damp.. Deep Fry wings in 375* peanut oil.. Makes them crisp.. Then once drained I drop them in a large bowl and add my Chipotle Sauce.. Swirl around in the sauce and serve on a platter.. It doesn't get any better than that... kidd Posted August 2, 2010 Report Share Posted August 2, 2010 i rub mine down with a hot and sweet rub....then put them on the smoker for 90 minutes at 250 spraying them down at 45 minutes with apple juice......then increase the temp to 350 and crisp the skin.....so moist you dont need sauce:).... I used a commercial kitchen to make my sauce this time around.. I made around 20 gallons.. And used 6 oz. bottles.. That is almost gone.. Sold most of it and still have a few bottles around.. Got the charcoal grill going good, took some big wings, trimmed them up, dipped them in melted butter, seasoned with garlic powder and black pepper, and threw them on the grill. When they were close to done, I coated them in some Frank's Red Hot Sweet Heat BBQ sauce, and finished them up on the grill.
