redkneck Posted July 25, 2010 Report Share Posted July 25, 2010 Just peel them (baby squash are the best). Blanch them in hot water (light boil to tender up). Then drain and pan fry them with LOTS of chopped onions and butter, it only takes a few minutes to get them done. Salt and pepper and you'll have a fine dish. Snipe Posted July 25, 2010 Report Share Posted July 25, 2010 This is my go to recipe... Fine chop one medium onion... Thin slice 3-4 large squash.. Saute' onions in 2 TBS of butter.. Once they are translucent add squash.. Simmer for about 30 minutes making sure you stir every few minutes.. Cook till the squash is soft.. drain off extra water and butter... Jeramie Posted July 29, 2010 Report Share Posted July 29, 2010 Brown Hamburger meat, mix in slices of Sqush, Zucchini, and one can of tomatoes. Slow cook with a lid until vegetables are soft. Once they are soft cover with a mixture of shredded Parmesian and Swiss. Once the top is covered and the cheese melts dig in..... Seriously wow.....
